The Lower Sixth Hospitality students rose to the challenge of organising and running a function, hosting near 100 guests for a Burns Night fundraising event. A culmination of weeks of preparation resulted in a fantastic evening for which Mr Harvey, Food Technology teacher, provides the following write up:

“Set the task of arranging a fundraising function to raise money for the school rugby tour to South Africa this summer, the Hospitality students created a function that many professional events management teams would have been exceptionally proud of.

The students had met with the clients and established that it would be an evening to celebrate Burns Night.They had to arrange where they would have it, the room decorations, the menu and stock a fully functional bar. They also arranged for a ceremonial piper for the evening as well as music and dancing for the entertainment after the food was served.

The students worked in the kitchen to prepare and cook the food. A menu of canapes, followed by a modern twist on traditional Haggis ‘neeps and tatties’, a dessert of cranachan and cheese and oat biscuits. The service team worked with students benefiting from the fund raising to serve food and drink throughout the evening.

It was a huge success with many guests astounded that the event had been organised and executed by students of the school. Guests left having had a thoroughly memorable evening. The finishing touch was student made shortbread with school crest pressed into it, using a press created on the school 3D printer.”

Domestic Operations Manager, Viv Wilson, managing the liaison between catering team and students, adds:

“The students who worked at the Burns Night function on Saturday night were amazing. The team work and camaraderie was an event to see. To see some of them finish off the evening with their parents and friends on the dance floor was a joy.

Particular mention must go to those in the catering team who gave up their evening off to assist with both the food preparation and the clearing up. A special mention must go to Nick & Oliver, senior chef team. They worked with the students on the Friday and Saturday and delivered the function from the kitchen with their usual flair and purpose, but also with a great deal of patience.”
